As the first long weekend of the year rolls around, we are packing up to go camping. I love quick & easy recipes that I can prepare in advance for quick meals outside. Although campfire cooking is a favourite, dinner seems to take a while to cook which involves having quick snacks or appetizers to take the edge off. Here’s a quick & easy real food menu for a weekend you can try.

Friday

Dinner

Food On The Road: Snack Boxes filled with cheese & crackers, veggies & dip, fruit for dessert. Extra snacks for the car.

Saturday

Breakfast

Eggs, Breakfast Sausage or Bacon, Toast & Fruit

Lunch

Lunch meat Sandwiches with cut vegetables and dip

Dinner

Hot dogs with condiments, homemade potato salad, foil vegetable packets
S’mores or check out our campfire favourites!

Sunday

Breakfast

Cereal with almond milk, fruit, instant coffee

Lunch

Liverwurst rice cakes, fruit

Snacks

  • Harvest Snaps
  • Fruit (apples, banana)
  • Vegetables (avocado, celery, carrots, baby tomatoes, snow peas)
  • Rice rusks
  • Iced Tea
  • Granola Bars
  • Homemade GORP

    Liverwurst rice cakes, eh? I’ll be honest, I never would have thought of that one.

      It’s a favourite of mine. Mr J and I had some last night. Make sure you choose fine liverwurst.
